Maybe it’s the beginning of the third trimester or just being cooped up inside during Winter months but I have been on a major baking kick lately. One of the recipes I’ve always wanted to master but been scared of is homemade bread. There is nothing tastier than warm, homemade bread with butter melting into a freshly cut slice. When I found this recipe via Jenny Can Cook’s YouTube video, I had to give it a try. It’s called “No Knead” but there is about 10 seconds of kneading- so the name may be a little misleading but hey, we can all knead dough for 10 seconds right?!
It really is quick to make (besides the rise time) and has minimal ingredients. The customization is endless too- sprinkle some herbs on top, try different flours, whatever!
Quick No Knead Rustic Bread
Prep: 5 minutes Bake: 45 minutes Total Time: 4+ hours
From Jenny Can Cook
3 c. flour (white or whole wheat)
1/4 t. yeast
1 t. salt
1.5 c. very hot water
Mix dry ingredients. Add water and continue to mix until incorporated. I did this step in my kitchenaid mixer with a dough hook.
Cover bowl with plastic wrap and leave on counter for 3+ hours. Dough will become puffy on top. Sprinkle some flour on a counter top and quickly knead a bit of flour into dough for about 10 seconds.
Place parchment paper in a bowl with dough on top. Cover with a towel while preheating oven to 450 degrees (F) with a dutch oven (lid on) in the oven. I love my Dutch oven- it can be found here. A few other great white Dutch ovens are here and here.
Once preheated, pick up parchment paper and dough, and place into dutch oven. Cover with lid and cook for 30 minutes in the oven.
Uncover dutch oven and remove the parchment paper. Cook for another 10-15 minutes to crisp without the lid on.
