I am a firm believer in eating a good breakfast to start the day off right. But sometimes, there aren’t many quick, healthy options.
My mother-in-law has been making this recipe for a long time, and she always has a bag of baked oatmeal squares in the freezer for quick breakfasts. At their house, they put frozen berries on top, microwave it, and drizzle some milk over it. It is just like eating cobbler for breakfast!
Here is her recipe:
Baked Oatmeal
1 cup oil
1 cup brown sugar (you could substitute honey or maple syrup)
5 eggs, beaten
6 cups old fashioned or quick oatmeal
2 tsp baking powder
1 tsp salt
2 cups milk (any type of milk- or even half & half works)
Nuts (optional)- any kind (slivered almonds and chopped walnuts are good)
Dried Fruit (optional)- any kind (cranberries are good)
1/2 cup ground flaxseed
1/2 cup coconut
1 tablespoon Cinnamon (plus extra for on top)
Preheat oven to 350 degrees. Mix all ingredients. Add nuts, dried fruit, flaxseed, coconut, and cinnamon.
Put in 9 X 13 pan and sprinkle with cinnamon. Bake for 30-40 minutes.
Cut into 12 squares and freeze in plastic bag for quick and easy breakfasts!
