As you know, I am a huge fan of quick and easy meals. I am also a fan of beef stroganoff- it’s one of those classic, home cooked comfort foods that reminds me of when I was little. I was looking at some recipes to follow and was surprised to see how many people suggest using cream cheese. I am sure it is super creamy and yummy, but I wanted a lighter option. So, I made my own up!
Crockpot Beef Stroganoff
Makes 4 servings
1 1/2 lbs beef stew meat (I didn’t even thaw it out!)
1 c plain greek yogurt
1 can cream of mushroom soup
1 T Worcestershire sauce
1 packet Liptons french onion soup mix
1/2 onion, chopped
1/4 c water
1. Line your crockpot- it makes cleanup a breeze and I use my crockpot so much more because of them! **See note at bottom of the post for purchasing information regarding the crockpot liners*** Place beef in the bottom.
2. Mix together the yogurt, cream of mushroom, Worcestershire, soup mix, onion, and water. Pour on top of beef.
3. Cook on low for 6 hours. Serve over noodles (I love the Barilla Plus Pasta because it keeps me full longer, unlike regular pasta!)
