Whole30 Hot Apple Cereal

Are you on the first week of Whole30 and already sick of eggs?  We had eggs once a day in some way or form during our month of Whole30 and I’m not going to lie, they did get old.  But maybe that is because we went through, I kid you not, 7 dozen eggs that first week.  As the weather turns cooler (not today, unfortunately, but in the next few weeks!), a bowl of Hot Apple Cereal is the perfect alternative.  I should just call this Whole30 Hot Apple Pie Filling- that’s what it tastes like!

Whole 30 Hot Apple Cereal

4 apples, any kind, chopped into small pieces
1 cup any type or mixture of nuts, chopped
4-5 dates, sliced
1 T. cinnamon
1 t. nutmeg
1/2 c. coconut oil
1 spoonful of coconut cream* for garnishing
*For coconut cream, I separate the liquid portion from the solids in the canned coconut milk.
  1.  Heat coconut oil in pan (a dutch oven works great).
  2. Add apples, nuts, dates, cinnamon and nutmeg to oil.  Stir until combined.
  3. Let mixture cook until apples are tender.
  4. Add a dollop of coconut cream and enjoy!
